I get an accurate enough estimation within five to ten seconds, and a precise temperature within twenty seconds. For anyone that thinks it is slow, please compare it to a dial "instant read" thermometer. It is indeed waterproof. I have dunked it many times in a gallon of water to get a temp from the middle.
